• Paprika helps to brown skinless chicken without adding extra fat. When baking, cover loosely with tin foil and remove for last 15 minutes of baking to allow browning and minimize drying out.
  • Wine or sherry can add flavor without extra calories as alcohol evaporates with cooking.
  • Dip fish filets or skinless chicken pieces in plain yogurt or 1% buttermilk and roll in seasoned bread crumbs and bake.
  • If cheese is called for in a recipe, sprinkle shredded reduced-fat cheese or half the amount of aged “old” varieties. When a recipe calls for feta cheese use ˝ feta and ˝ 1% or “dry” cottage cheese.
  • Add grains, legumes and/or more vegetables to entrees. For example, load up stir-fry dishes or chili with lots of vegetables, beans and serve with rice.
