September 27, 2010 Did you know that vitamin C is affected by oxygen exposure, pH, heat, light, and the mineral copper? Using baking soda in cooking, excessive cooking, warm storage room temperatures or use of copper pots and pans will all cause a greater loss of vitamin C from your foods. Exposing citrus juices to light and air (uncovered juice jugs) will lose most of its vitamin C within 1 -2 days! |
