July 12, 2009 Tomatoes are a great source of lycopenes – an antioxidant that protects against certain cancers. Tomatoes that are darker in color (deep red color) have up to 50% more lycopene than a regular tomato. Vine ripened tomatoes have more lycopene than tomatoes that are picked early and ripen off the vine. Remember, lycopene is found in the skin of the tomato so be sure to eat the skins! |
